Even on its own, cocoa requires real expertise to balance the bitter with the sweet, within classic recipes like Excellence 70%, Excellence 85% or even Excellence 90%. MAKE SURE YOU NEUTRALISE YOUR PALATE

If you’re trying several varieties, neutralise your palate in between each tasting, with white bread, weakly brewed rosehip tea or mineral water. Before tasting, avoid smoking or eating any highly spicy foods. Always begin tasting with the chocolate with the lowest cocoa percentage. This means starting with white chocolate, then milk and finally dark chocolate, Gradually work up from low- to high-percentage varieties.
