- 150 g mixed nuts, roughly chopped
- 150 g Lindt EXCELLENCE 70% Cocoa Dark Chocolate
- 1 tbsp almond butter
Line a couple of baking sheets with greaseproof paper and set aside.
Tip the nuts into a frying pan and gently toast over a medium heat - shake (or stir) continuously until the nuts turn a golden colour (watch closely as they can burn, and become bitter, very quickly). Tip into a bowl and set aside.
Melt the chocolate in a heat-proof bowl set over a pan of barely simmering water. Add the almond butter and stir until melted. Remove from the heat and leave to cool for 5 minutes.
Add the chopped nuts to the melted chocolate and mix well until the nuts are completed coated in the chocolate.
Using a tablespoon, carefully spoon clusters onto the prepared baking sheets, gently shaping into rounds (you should have around 10-12). Leave to set in a cool place.
