Ingredients
- 125 g Lindt EXCELLENCE 85% Cocoa Dark Chocolate
- 4 Stroopwafel caramel waffles (see Tip)
- 4 scoops of good quality cherry ice cream
- 4 tbsp black cherries in kirsch (see Tip)
- A handful of fresh cherries (see Tip)
Method
Step 1.
Set aside two squares of Lindt EXCELLENCE 85% Cocoa Dark Chocolate to decorate.
Step 2.
Finely chop the remaining chocolate and pop into a heat-proof bowl. Set over a saucepan of barely simmering water, stirring frequently, until the chocolate has melted. Don’t let the water touch the bowl or the chocolate will overheat. Remove from the heat and pour into a small jug.
Step 3.
Set out 2 plates on a flat surface. Place a waffle onto each plate and top with a scoop of cherry ice cream. Spoon 1 tablespoon of black cherries in kirsch over each stack. Repeat with another waffle, scoop of ice cream and tablespoon of black cherries in kirsch.
Step 4.
Drizzle with the melted chocolate and top each with 1 square of the reserved chocolate. Serve straight away scattered with fresh cherries and the jug of melted chocolate on the side.
