Chocolate Orange Pudding

- 75 g unsalted butter, melted
- 45 g self-raising flour
- 190 ml fresh orange juice
- Zest of 1 orange
- 90 ml double cream
- 80 g golden caster sugar
- 2 large eggs, separated
- 160 g Lindt Excellence 70% Cocoa Dark Chocolate, melted
- 60 g Lindt Excellence 70% Cocoa Dark Chocolate, chopped
- To serve:
- Lindt Excellence 70% Cocoa Dark Chocolate, melted
- Curls of orange peel and fresh orange slices
- Scoops of good quality vanilla ice cream
Preheat the oven to 180C/160 Fan/Gas 4. Lightly grease a large oven-proof dish and set into a deep roasting tin.
In a large mixing bowl, mix together the butter, flour, 130 ml fresh orange juice, orange zest, double cream, golden caster sugar and egg yolks until combined.
In a separate bowl, mix together the melted chocolate with the remaining 60 ml fresh orange juice until smooth and glossy.
Stir the orange infused melted chocolate into the batter and mix until combined.
In a separate bowl, whisk together the egg whites until you have soft peaks. Gently fold into the batter.
Stir in the chopped dark chocolate until evenly distributed throughout the mix.
Spoon into the prepared dish and transfer the roasting tin into the oven. Fill the tin with enough hot water to come half-way up the sides of the dish.
Bake for around 15-18 minutes until just set on top. Remove from the water bath and leave to cool for 5 minutes. Bake for around 15-18 minutes until just set on top. Remove from the water bath and leave to cool for 5 minutes.
Serve warm drizzled with melted chocolate, curls of orange peel, slices of fresh orange and a scoop of good quality vanilla ice cream.
