Dark Chocolate and Coconut Energy Balls

Ingredients
- 100 g almonds
- 5 squares Lindt EXCELLENCE 70% Dark Chocolate (see Tip)
- 1 tbsp jumbo oats
- 75 g pitted Medjool dates
- 1-2 tbsp maple syrup
- 3 tbsp almond butter
- To decorate:
- Desiccated coconut (see Tip)
Method
Step 1.
Put the almonds into a food processor and blitz to crumbs. Add the chocolate and oats and blitz again until you have the consistency of breadcrumbs.
Step 2.
Add the dates, 1 tablespoon of maple syrup and the almond butter. Pulse to combine. Taste to check the sweetness and add a little more maple syrup, if wished. Tip into a bowl.
Step 3.
Line a baking sheet with greaseproof paper and sprinkle with desiccated coconut in an even layer.
Step 4.
Shape the mix into 12 balls. Roll each ball individually in the desiccated coconut.
Step 5.
Set onto a plate. Cover and chill for 20 minutes to firm up.
