Lindt Excellence Classic Dark Chocolate Cake

Chocolate cake is a classic for a reason, and whether you’re throwing a birthday party or hosting a dinner this recipe works for big or small celebrations. Adding Lindt Excellence dark chocolate to the equation makes it feel luxuriously sophisticated.

250g plain flour

30g cocoa powder

1 ¾ tsp bicarbonate of soda

1 tsp baking powder

1 tsp salt

220g dark brown sugar

100g granulated sugar

175g unsalted butter, room temperature

1 bar (100g) Lindt Excellence 90% Cocoa, melted and cooled

2 eggs

2 tsp vanilla extract

350ml buttermilk

450g unsalted butter, room temperature

190g icing sugar

2 bars (100 g each) Lindt Excellence 70% Cocoa, melted and cooled

1 tsp vanilla extract



oven to 180°C (350°F). Grease and line three 23cm (9”) round cake tins.


In a medium bowl

sift flour with cocoa powder, bicarbonate of soda, baking powder and salt. In a separate bowl, cream the brown sugar, white sugar and butter until pale and fluffy. 



melted Lindt Excellence 90% chocolate into the butter mixture, beating until combined. Add eggs, one at a time, beating until just combined. Beat in vanilla. Alternate adding a third of the dry ingredients with adding half of the buttermilk into the butter mixture.


Divide Batter

evenly between tins, smoothing the tops, and bake for 35 to 40 minutes in the centre of the oven until a tester inserted into the centre of cakes comes out clean. Transfer to a rack.


After 10 minutes

run a knife around sides of cakes. Turn out of tins, invert and cool on racks, for about 1 hour. Cover with cling film and refrigerate for a further 2 hours.


To assemble your layered cake

trim the tops of cakes if needed. Place first cake round on a cake stand. Spread with roughly ¼ of the buttercream (see instructions, below). Layer another cake on top. Repeat spreading and layering. Ice sides and top of cake with remaining buttercream, and for that finishing touch decorate with Lindt Excellence chocolate shards

1. In a medium bowl, beat butter with icing sugar until combined

2. Pour in melted Lindt Excellence 70% chocolate, stirring until combined. Beat until very light and fluffy then add the vanilla.
