Pancake Stack with Chocolate Sauce
Pancakes are perfect for a special breakfast, brunch or dessert. However, the secret to a delicious pancake lies in the accompaniments… Here we transform our luxurious Lindt Hazelnut Chocolate Spread into a rich and indulgent chocolate sauce to create the most delicious pancake stack.
Chocolatier’s Tip
If serving to children, ensure the cherries are pitted and sliced before serving. You could also serve with other fresh fruit (raspberries, blueberries, strawberries and/or sliced banana all work well) or with a warm fruit compote.
Serves 2-3 (with 8-9 thick pancakes)
Lindt Hazelnut Chocolate Spread 200g

Ingredients
- 250 ml full-fat milk
- 1 large egg
- 180 g self raising flour
- 1 tsp baking powder
- 2 tbsp caster sugar
- Spray sunflower oil
- About 3 tbsp Lindt Hazelnut Chocolate Spread, or to taste
- 1-2 tbsp chopped roasted hazelnuts
- Fresh cherries (see Tip)
Method
Step 1.
Whisk together the milk and egg in a large bowl.
Step 2.
Add the flour, baking powder and caster sugar. Whisk to combine.
Step 3.
Spray a nonstick frying pan with a little sunflower oil and place over a medium heat. Once the pan is hot, pour approximately 3 tbsp of batter into the pan and gently spread out to form a small disc. Leave to cook for 3 minutes - don’t be tempted to fiddle with it - or until golden brown underneath.
Step 4.
Flip using a palette knife or spatula and cook for a further 2-3 minutes or until just firm. Pop onto a plate and repeat with the remaining batter - using more oil, as necessary.
Step 5.
Spoon the Lindt Hazelnut Chocolate spread into a microwave safe bowl. Microwave gradually for 25-40 seconds, depending on how thick or thin you want your chocolate sauce.
Step 6.
Pile the pancakes into a stack, drizzle over the chocolate sauce, sprinkle with chopped hazelnuts and top with cherries, if wished.
