NEW Meringue Easter Nest

Crisp meringue and smooth silky chocolate ganache provide the perfect little nest for your favourite Lindt Easter chocolates.

  • 50g Egg whites (from about 2 eggs)
  • 65g Caster sugar
  • 35g Icing sugar, sifted

For the meringue

preheat the oven to 80°c

Combine

the eggwhites and half of the caster sugar into the bowl of your electric mixer and whisk until stiff peaks form.

Gradually

add the rest of the caster sugar, one teaspoon at a time.

Once

all of the sugar is incorporated and the mixture is stiff, take off the machine and gently fold in the icing sugar

Place

the meringue mix into a piping bag with a star nozzle

Draw

five 8cm circles in the back of some baking paper. Turn the paper around to the clean side and pipe nests by starting in the middle to create a base, then use circular motions out of the edges of the circle to form the sides

Bake or dry

for about 3 hours with the door slightly ajar

To make the ganache

combine the cream and glucose in a saucepan and bring to the boil. Add the chocolate mix until smooth and glossy. Add the butter and stir in. Mix in amaretto, if using. Set aside to cool

Generously

fill each nest with chocolate ganache and top with Lindt Easter chocolates
