Lindt Excellence Chocolate Banana Loaf

This luxurious take on an everyday banana loaf features intense Lindt Excellence dark chocolate, and is topped off with a layer of ganache icing. Enjoy a slice on your next tea or coffee break

150g plain flour

30g cocoa powder

1 tsp baking powder

½ tsp bicarbonate of soda

½ tsp salt

150g granulated sugar

120g unsalted butter, melted and cooled

2 eggs

300g (about 3-4) ripe bananas, mashed

180g natural yogurt

1 tsp vanilla extract

1 bar (100g) Lindt Excellence 70% Cocoa, chopped

1½ bars (150 g) Lindt Excellence 70% Cocoa, finely chopped

180 ml whipping cream

15g unsalted butter Duration

Duration:  -Prep time: 20 minutes

                 (plus 2 hours cooling)

                -Cook time: 1 hour

Preheat

oven to 180°C (350°F). Grease a 23x13cm (9x5-in) loaf tin and line with one strip of baking parchment.

In a medium bowl

sift flour with cocoa powder, baking powder, bicarbonate of soda and salt.

Beat

sugar with melted butter until well combined. Add eggs, one at a time, mixing well after each addition. Beat in mashed bananas, yogurt and vanilla and mix well.

Add

dry ingredients to banana mixture and mix until just combined, scraping down sides of bowl as needed. Mix in chopped Lindt Excellence 70% chocolate until just combined.

Scrape

batter into prepared tin, smoothing the top. Bake in centre of the oven for about one hour, or until a tester inserted in the centre of the cake comes out clean. Allow to cool for ten minutes in the tin before turning out onto a wire rack to cool completely.

For the ganache icing

place Lindt Excellence 70% chocolate in a medium-sized heatproof bowl and set aside.

In a small pan

heat cream over a medium heat and bring just to a simmer. Pour the hot cream over the chopped chocolate so it is completely covered. Allow to stand until the chocolate has melted, for about two minutes. Add the butter and whisk until mixture is smooth and shiny.

Allow

the ganache to cool until thick enough to spread over the cooled cake. Spread icing evenly over top of loaf.
