Lindt Excellence Chocolate Pancakes
8-10 pancakes
Lindt Excellence 70% Cocoa and Lindt Excellence with a Touch of Sea Salt

A delicious chocolate version of a classic. Perfect as a treat or as a wonderful chocolate breakfast.

115g plain flour

10g quality cocoa powder

1tsp baking powder

40g crème fraîche

1 egg

80g Lindt Excellence 70% Cocoa, melted and cooled 

120ml milk

A little butter, for frying

250ml milk

100g golden caster sugar

2 egg yolks

25g corn flour

½ tsp vanilla bean paste

130g Lindt Excellence with a Touch of Sea Salt, chopped

20g unsalted butter


Duration -Prep time: 15 minutes

             -Cook time: 15 minutes




First make the chocolate crème

Combine the milk and half the sugar and bring to the boil in a pan, and in a separate bowl combine the egg yolks, corn flour, vanilla and remaining sugar.



the pan off the heat and add the egg yolk mixture into the hot milk. Whisk to combine and return to the heat, stirring constantly, until it forms a thick custard. At this point, take off the heat and add the chopped Lindt Excellence chocolate and butter and mix until silky and smooth.


Cover the surface

of the crème directly with cling film, and allow to cool fully. To finish, lightly stir the crème to ensure it is smooth.


For the pancakes

sieve dry ingredients in a mixing bowl then stir in the crème fraîche and the egg.



the milk and melted Lindt Excellence 70%, creating a smooth ganache, then add to the rest of the mixture and whisk until smooth.


To cook

place a non-stick frying pan over medium heat. Brush the pan with a little butter and place batter into pan (about a tablespoon for a small pancake).



each pancake for 3-4 minutes or until bubbles appear on the surface, before flipping to cook through, about a further 1 minute.



to a plate to cool slightly, then generously fill pancakes with the chocolate crème, stack and serve with a little chocolate sauce, if liked. Also delicious with ice cream, or some sliced strawberries or bananas.
